Twice a night, ten guests sit down together at the hinoki counter and Chef Morimoto serves each course by hand. You tell us what you can't eat. He decides the rest.

01The evening

About two hours, start to finish

The courses move at the pace of the counter, not the kitchen, so the whole row eats each piece within a minute of it being made. Times here are for the 5:30 seating.

  1. 5:20

    Arrive and settle in

    Coats go on the hooks behind you and warm towels come out. Everyone at a seating starts at the same moment, so we hold the first course for five minutes and then begin.

  2. 5:30

    Three small plates

    Something cold, something steamed, something grilled, built around whatever came off the plane that morning.

  3. 6:00

    Eleven nigiri

    Light white fish first, then shellfish, then the richer cuts of tuna and eel. Each piece is brushed and set down in front of you, ready to eat in one bite.

  4. 7:00

    The hand roll

    Chopped toro and pickled daikon in crisp nori, passed straight from his hand to yours.

  5. 7:15

    Soup and something sweet

    Red miso with clams, then tamago made the old way, baked slowly until it's like a small sponge cake.

  6. 7:30

    Tea

    A pot of hojicha to finish, and no rush to leave before the 8:00 guests arrive.

02Policies

Price, deposit and cancellation

Ten seats means one empty chair costs the counter a tenth of the night. These rules are written down so nobody is surprised by them.

    Inside 48 hours the deposit is kept. If we fill the seat from the waitlist, we refund it anyway.

  • Changing the headcount

    Going down a guest is fine until 48 hours out. Going up depends on whether a seat is free, so call.

  • Running late

    After fifteen minutes we serve what's still to come and skip the courses already gone.

  • Age

    Guests twelve and over, since the courses and the pace are the same for everyone.

  • New dates open on the first of the month

    For the whole of the following month, at 10:00am.

03Dietary needs

What the counter can change, and what it can't

Tell us when you request seats, not on the night. Fish is ordered for the exact number of guests, and a swap has to be on the plane.

We can

  • Shellfish allergy

    With notice. You'll get fish in place of every shellfish course.

  • Pregnancy

    Cooked and seared pieces replace the raw ones, and it's still seventeen courses.

  • Gluten

    We brush with tamari and leave out the tempura crumb.

Better in the dining room

  • Vegetarian or vegan

    The dining room has vegetarian rolls and hot dishes, and we'll happily seat you there.

  • No raw fish at all

    Omakase without raw fish is a different meal, and we'd rather not charge you for this one.

  • Severe fish allergy

    We can't make the counter safe. Every surface touches fish.

We confirm by phone or email within a day and take the deposit then. Nothing is held until you hear from us.

Tuesday to Saturday.
For seven to nine, choose the buyout and tell us the number below.
For every guest, even if the answer is none.
